Description

This One Pot Chicken Parmesan Pasta is a delicious and easy-to-make dish that combines tender chicken, pasta, marinara sauce, and gooey cheese all in one pot for minimal cleanup and maximum flavor.

For the Chicken:

  • 23 boneless skinless chicken breasts, diced into bite-sized pieces
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder

For the Pasta:

  • 1 medium yellow onion, minced
  • 3 cloves garlic, minced
  • 16 oz dried short-cut pasta (such as rigatoni)
  • 24 oz jar of marinara sauce
  • Water to fill the empty marinara sauce jar
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • Salt and pepper, to taste
  • Additional dried Italian seasoning, optional
  • Fresh parsley and/or basil, minced (for garnish)

Instructions

  1. Cook the Chicken: Season and cook the chicken until mostly cooked through. Remove from pot.
  2. Sauté Onion and Garlic: Cook the onion and garlic until soft. Add marinara sauce and water.
  3. Add Chicken and Pasta: Stir in chicken and pasta. Cover and cook until pasta is tender. Stir in parmesan and mozzarella.
  4. Add Remaining Cheese: Sprinkle mozzarella on top and cook until melted and gooey.
  5. Finish and Serve: Add Italian seasoning if desired, garnish with parsley or basil, and serve.
