Truffle Base

  • 150g golden Oreo cookies (or plain/gluten-free biscuits)
  • 60g vegan/dairy-free cream cheese

Coating & Decoration

  • 200g dairy-free white chocolate
  • Black food gel (for eyes, mouth, and buttons)
  • Orange food gel (for carrot nose)
  • Strawberry laces or candy pencils (for the scarf)

Instructions

  1. Prepare tray: Line a baking tray with greaseproof paper and set aside to keep truffles from sticking.
  2. Crush cookies: Place the cookies in a food processor or blender and blitz until you achieve fine crumbs. Alternatively, crush with a rolling pin if you don’t have a processor.
  3. Mix truffle base: Transfer cookie crumbs into a large bowl, add the vegan cream cheese, and mix thoroughly until the mixture is sticky and holds together when formed into balls.
  4. Shape snowmen: Using clean hands, weigh 20g of the mixture to form a large ball, then roll 7g into a smaller ball. Stack the smaller ball on top of the larger one to form the snowman shape. Repeat for all truffles and place on the lined tray.
  5. Freeze to set: Place the tray in the freezer for about 20 minutes or until the truffles are firm to the touch.
  6. Melt chocolate: Five minutes before removing the truffles, melt the dairy-free white chocolate in a heatproof bowl set over a saucepan of boiling water (bain-marie) or carefully in the microwave until smooth.
  7. Coat truffles: Remove truffles from freezer. Dip each into the melted white chocolate, either by inserting a toothpick into the bottom or balancing on a fork and spooning the chocolate over. Let excess drip off. Repeat if desired for thicker coating. Return coated truffles to the tray.
  8. Re-freeze to set coating: Place the coated truffles back in the freezer for 5-10 minutes until the chocolate sets firmly.
  9. Prepare decorations: Tint small amounts of leftover white chocolate using black and orange food gels and transfer each into piping bags with a small cut at the tip.
  10. Decorate snowmen: Pipe the carrot nose in orange, then apply black eyes, mouth, and buttons with the black chocolate.
  11. Add scarves: Cut strawberry laces or candy pencils to size and wrap around each snowman’s neck. Use a dab of melted white chocolate if needed to secure the scarves.
  12. Final setting: Place snowmen back in the freezer for 5 minutes to fully set the decorations.
  13. Serve and enjoy: Remove from freezer and serve these adorable, tasty snowman truffles.
