Cheesecake Base
- 300 g Digestive biscuits
- 150 g Unsalted Butter or Stork, melted
Cheesecake Filling
- 500 g Full Fat Cream Cheese
- 100 g Icing Sugar
- 300 ml Double Cream
- 250 g Kinder Chocolate
- 1 tsp Vanilla Extract
- 13 Individual Kinder Bueno Bars, chopped
Decoration
- 150 ml Double Cream
- 2 tbsp Icing Sugar
- 3 Individual Kinder Bueno Bars, chopped
- 50 g Chocolate, melted
- Chocolate Sprinkles
Instructions
- Prepare the Cheesecake Base: Melt the butter either in the microwave in short bursts or in a small pan over medium heat. Blitz the digestive biscuits in a food processor until they become fine crumbs. Add the melted butter and pulse until well combined. Press this mixture firmly into the base of an 8-inch (20cm) deep springform tin and refrigerate while preparing the filling.
- Melt the Kinder Chocolate: Carefully melt the Kinder Chocolate in the microwave in short bursts until fully melted. Allow it to cool slightly as you move on to the next step.
- Make the Cheesecake Filling: Using an electric mixer, whisk the full-fat cream cheese, icing sugar, and vanilla extract until smooth and combined. Gradually pour in the melted Kinder Chocolate and continue whisking until the mixture is smooth and even.
- Whip in Double Cream: Pour the liquid double cream into the mixture and whip at medium speed until the texture thickens and resembles a mousse. It should hold its shape firmly once whipped. This is aided by the rapid setting of the melted chocolate within the mixture.
- Fold in Kinder Bueno: Gently fold the chopped Kinder Bueno bars into the whipped mixture. Note that adding Kinder Bueno bars to the filling will cause them to soften over time; if preferred, omit this step or add them only as decoration.
- Assemble and Chill: Pour the filling onto the biscuit base and level the surface smoothly. Cover the cheesecake with cling film and refrigerate for at least 5-6 hours or preferably overnight to set properly.
- Decorate the Cheesecake: Remove the cheesecake from the springform tin. Whip the additional double cream with the icing sugar to soft peaks. Drizzle the melted chocolate over the top, garnish with whipped cream, scatter with chopped Kinder Bueno pieces, and sprinkle with chocolate sprinkles. Serve chilled.

- For a firmer texture, chill the cheesecake overnight.
- Adding chopped Kinder Bueno inside the filling may cause them to soften; add just before serving for crunchier pieces.
- If you prefer a less sweet cheesecake, adjust the icing sugar according to taste.
