Ingredients
Scale
Main Ingredients
- 1/2 cup creamy almond butter (or cashew butter)
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1/2 cup Erewhon Harvest Medley Cereal (or Crispy Brown Rice Cereal)
- 1/4 cup ground flax seed
- Pinch of salt
- 2 tablespoons hemp seeds (or chia seeds)
- 1/3 cup dried blueberries
Instructions
- Mix Wet Ingredients: In a large bowl, combine the almond butter and maple syrup, stirring together until smooth and well blended. Add the vanilla extract and mix thoroughly.
- Add Dry Ingredients: Add rolled oats, Erewhon Harvest Medley Cereal, ground flax seed, hemp seeds, dried blueberries, and a pinch of salt to the almond butter mixture. Stir until all ingredients are evenly coated and form a sticky dough.
- Adjust Consistency: If the mixture feels too wet, sprinkle in a few more oats until the mixture firms up. If it’s too dry, add a teaspoon of water at a time and mix until the texture is moist but holds together.
- Chill: Refrigerate the mixture for 10 minutes to firm it up, making it easier to shape.
- Form Bites: Using a scooper or tablespoon, measure out roughly 1 and 1/2 tablespoons of the mixture at a time. Roll each portion between your palms to form bite-sized balls.
- Store: Place energy bites in an airtight container and refrigerate. They will keep fresh for up to one week.
Notes
- To keep the bites vegan, use pure maple syrup or another plant-based sweetener.
- You can substitute hemp seeds with chia seeds without altering the flavor significantly.
- Feel free to swap Erewhon Harvest Medley Cereal for any crispy brown rice cereal or similar cereal.
- Store in the refrigerator to preserve freshness and maintain texture.
- These bites can be frozen for up to 3 months; thaw in the fridge before eating.
- For added crunch, consider mixing in chopped nuts or seeds of your choice.
