Description

These No-Bake Blueberry Muffin Energy Bites are a delicious and nutritious snack that combines the flavors of blueberry muffins with the convenience of a protein-packed energy bite. Made with almond butter, oats, hemp seeds, and dried blueberries, they provide a perfect balance of fiber, healthy fats, and natural sweetness without any baking required. Ideal for a quick breakfast on the go or a wholesome snack throughout the day.

Ingredients

Scale

Main Ingredients

  • 1/2 cup creamy almond butter (or cashew butter)
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup rolled oats
  • 1/2 cup Erewhon Harvest Medley Cereal (or Crispy Brown Rice Cereal)
  • 1/4 cup ground flax seed
  • Pinch of salt
  • 2 tablespoons hemp seeds (or chia seeds)
  • 1/3 cup dried blueberries

Instructions

  1. Mix Wet Ingredients: In a large bowl, combine the almond butter and maple syrup, stirring together until smooth and well blended. Add the vanilla extract and mix thoroughly.
  2. Add Dry Ingredients: Add rolled oats, Erewhon Harvest Medley Cereal, ground flax seed, hemp seeds, dried blueberries, and a pinch of salt to the almond butter mixture. Stir until all ingredients are evenly coated and form a sticky dough.
  3. Adjust Consistency: If the mixture feels too wet, sprinkle in a few more oats until the mixture firms up. If it’s too dry, add a teaspoon of water at a time and mix until the texture is moist but holds together.
  4. Chill: Refrigerate the mixture for 10 minutes to firm it up, making it easier to shape.
  5. Form Bites: Using a scooper or tablespoon, measure out roughly 1 and 1/2 tablespoons of the mixture at a time. Roll each portion between your palms to form bite-sized balls.
  6. Store: Place energy bites in an airtight container and refrigerate. They will keep fresh for up to one week.

Notes

  • To keep the bites vegan, use pure maple syrup or another plant-based sweetener.
  • You can substitute hemp seeds with chia seeds without altering the flavor significantly.
  • Feel free to swap Erewhon Harvest Medley Cereal for any crispy brown rice cereal or similar cereal.
  • Store in the refrigerator to preserve freshness and maintain texture.
  • These bites can be frozen for up to 3 months; thaw in the fridge before eating.
  • For added crunch, consider mixing in chopped nuts or seeds of your choice.
