For the spaghetti:
- 12 ounces spaghetti, cooked al dente
For the chicken:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
For the sauce:
- 1 cup shredded Monterey Jack cheese
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
- Cook the spaghetti: Cook spaghetti al dente according to package instructions. Drain and set aside.
- Cook the chicken: Season chicken with paprika, Italian seasoning, salt, and pepper. Cook in olive oil until golden brown and fully cooked. Set aside.
- Prepare the sauce: In the same skillet, sauté onion and garlic. Add chicken broth and heavy cream. Simmer until slightly thickened.
- Combine ingredients: Add cooked spaghetti and chicken back to the skillet. Toss to coat in the sauce.
- Add cheese: Sprinkle Monterey Jack cheese over the top. Cover and let melt.
- Serve: Garnish with parsley and serve warm.
