  • 3 Tbsp powdered sugar

Icing:

  • 1 cup powdered sugar (sifted)
  • 1 ½ Tbsp lemon juice
  • 1 Tbsp milk

Instructions

  1. Preheat oven and prep pan: Preheat oven to 350°F. Grease a 9×5-inch loaf pan.
  2. Mix dry ingredients: Combine flour, baking powder, lemon zest, and salt in a bowl.
  3. Cream butter and sugar: Cream butter and sugar until pale and fluffy.
  4. Add wet ingredients: Beat in eggs, vanilla extract, and lemon juice.
  5. Combine batter: Alternate adding flour mixture and buttermilk, mix until just incorporated.
  6. Bake: Transfer batter to pan and bake for 45-55 minutes until golden brown.
  7. Make lemon syrup: Mix lemon juice and powdered sugar. Brush on warm cake.
  8. Ice the cake: Combine icing ingredients and pour over cooled cake.

Notes

  • For a buttermilk substitute, combine ½ cup milk with 1 ½ tsp lemon juice or vinegar and let sit for 5 minutes.
