These Mocha Energy Bites are a delicious and nutritious no-nut, paleo-friendly snack packed with natural sweetness from Medjool dates, a rich mocha flavor from cocoa and instant coffee, and a boost of protein from chocolate protein powder.   • 1 cup pitted Medjool dates (about 13 dates)
  • 1/4 cup sunflower seed butter (unsweetened)
  • 1 tsp vanilla extract
  • 1/3 cup chocolate protein powder (32g)
  • 1/4 cup cocoa powder (24g)
  • 2 tsp instant coffee
  • Pinch of salt
  • Water (if dough is too dry)

Instructions

  1. Soften the dates: Soak the pitted Medjool dates in hot water to soften them. Place the dates in a small bowl and pour hot water over them until fully submerged. Let them soak for 5-10 minutes, then drain the water thoroughly.
  2. Blend the dates: Place the softened dates in a food processor and blend until they form a sticky paste, stopping to scrape down the sides as needed.
  3. Add remaining ingredients: Add sunflower seed butter, vanilla extract, chocolate protein powder, cocoa powder, instant coffee, and a pinch of salt into the food processor. Blend all ingredients together, scraping the sides occasionally, until the dough forms a large, sticky ball. If the dough seems too dry, add a small amount of water to help it come together.
  4. Form energy bites: Scoop and roll the dough into balls about one tablespoon in size. You should be able to make approximately 17 energy bites.
  5. Store: Place the energy bites in an airtight container or a sealed bag. Store them in the refrigerator or freezer to keep fresh.

Notes

  • Medjool dates provide natural sweetness and moisture, so make sure to fully soak and drain them for best texture.
  • If the dough is too crumbly, add water sparingly to achieve a sticky consistency that holds its shape.
