Description

Mississippi Pot Roast is a flavorful, tender slow-cooked beef dish made with a chuck roast, ranch dressing mix, au jus gravy mix, butter, and pepperoncini peppers. This easy recipe yields a rich and savory pot roast perfect for serving with noodles, rice, or mashed potatoes.

Ingredients

Scale

Beef

  • 1 (3-4 pounds) chuck roast

Seasonings and Add-ins

  • 1 packet ranch dressing mix (approximately 1 ounce)
  • 1 packet au jus gravy mix (approximately 0.9 ounces)
  • 1/4 cup butter (4 tablespoons)
  • 45 pepperoncini peppers

Instructions

  1. Prepare the roast: Place the chuck roast in the slow cooker evenly. Sprinkle the ranch dressing mix and the au jus gravy mix over the top of the roast to ensure even seasoning.
  2. Add peppers and butter: Lay the 4 to 5 pepperoncini peppers on top of the seasoning mixes. Then, place the 1/4 cup of butter over the peppers and roast, which will melt and infuse the meat as it cooks.
  3. Slow cook the roast: Cover and cook the roast on low heat for 8 hours. This slow cooking process will make the meat tender and flavorful.
  4. Serve and enjoy: Once cooked, shred or slice the roast and serve it warm with your choice of noodles, rice, or mashed potatoes for a hearty meal.

Notes

  • For a thicker gravy, remove the roast after cooking and stir the cooking juices on the stove over medium heat to reduce.
  • The pepperoncini peppers add both moisture and a mild tangy heat; adjust the number of peppers according to your taste preference.
  • Use a chuck roast between 3 to 4 pounds for best results, but you can slightly adjust cooking times for different sizes.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Pair with mashed potatoes, egg noodles, or steamed rice for a complete meal.
