  • 1 teaspoon baking powder

Wet Ingredients:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup maple syrup
  • 2 tablespoons milk of choice
  • 1 tablespoon avocado oil (or canola/melted coconut oil)
  • 1 egg
  • 1 teaspoon vanilla extract or vanilla bean paste

Vanilla Bean Glaze:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla bean paste or vanilla extract
  • 23 teaspoons milk

Instructions

  1. Preheat the oven: Preheat oven to 375°F and prepare a mini muffin pan with liners or cooking spray.
  2. Mix dry ingredients: In a large bowl, combine flour, baking powder, baking soda, salt, and chai spice mix.
  3. Combine wet ingredients: In another bowl, mix together yogurt, milk, oil, maple syrup, egg, and vanilla.
  4. Combine wet and dry: Add wet ingredients to dry ingredients, fold gently until just combined.
  5. Bake: Fill muffin pan, bake for 10-14 minutes until a toothpick comes out clean. Cool for 5 minutes in the pan, then transfer to a wire rack.
  6. Make glaze: Whisk powdered sugar, milk, and vanilla until smooth.
  7. Glaze muffins: Dip or drizzle muffins with glaze, let set before serving.

Notes

  • You can adjust the sweetness of the glaze to your preference by adding more or less powdered sugar.
