Instructions

- Assemble bottom layer: Spread about 1/4 cup of refried beans evenly over the bottom side of each toasted tortilla. Then, top this layer with a generous portion of the prepared taco meat.
- Add middle toppings: Place another toasted tortilla over the top of the meat layer. Spread about 2 tablespoons of enchilada sauce evenly over the top tortilla and sprinkle diced tomatoes on top for freshness and acidity.
