Instructions
- Preheat and Prepare Pan: Preheat your oven to 180°C (356°F) and grease a 20cm (8 inch) springform baking pan thoroughly to prevent sticking.
- Mix Ingredients: In a large bowl, whisk together the ricotta cheese, eggs, 100 ml honey, corn starch, and vanilla extract until the mixture is smooth and free of lumps, ensuring a creamy batter.
- Bake the Melopita: Pour the smooth batter into the prepared baking pan and bake in the preheated oven for 45-50 minutes, or until the top is browned and the center is set, with no wobble when gently shaken.
- Cool in Pan: Once baked, allow the melopita to cool in the pan for about 5 minutes to set further and make it easier to remove.
- Remove and Cool Completely: Carefully remove the pie from the springform pan and let it cool completely to room temperature on a wire rack.
- Add Toppings: Drizzle the cooled pie with an additional 60 ml (approximately 1/4 cup) of honey and dust the surface evenly with 1 tablespoon of ground cinnamon for a fragrant and sweet finish.
