For the Chicken:
- 2 tbsp olive oil
- 2 chicken breasts
- 50g all-purpose flour
For the Broth:
- 3 garlic cloves (minced)
- 8 sun-dried tomatoes (sliced)
- 1/2 tbsp smoked paprika
- 1/2 tbsp oregano
- 1/2 tbsp chili flakes
- 600ml chicken stock
- 300ml single cream
- 2 tbsp grated parmesan (plus extra for garnish)
- 1/2 tsp ground pepper
- 1/2 tsp flaky salt
- 1/2 tsp sugar
For Serving:
- 200g ramen noodles
- Coriander
- Beansprouts
- Edamame beans
- Spring onion
- Chili oil
Instructions
- Coat and Cook the Chicken: Coat chicken breasts with flour and fry until golden. Set aside.
- Prepare the Broth: Sauté garlic, sun-dried tomatoes, spices, then add stock, cream, and parmesan. Return chicken to the pan and cook.
- Season and Add Noodles: Season the broth, add more stock, then cook the ramen noodles according to package instructions.
- Assemble: Divide noodles and broth into bowls. Top with sliced chicken, coriander, beansprouts, spring onions, edamame beans, and chili oil.
