For the Chicken:

  • 2 tbsp olive oil
  • 2 chicken breasts
  • 50g all-purpose flour

For the Broth:

  • 3 garlic cloves (minced)
  • 8 sun-dried tomatoes (sliced)
  • 1/2 tbsp smoked paprika
  • 1/2 tbsp oregano
  • 1/2 tbsp chili flakes
  • 600ml chicken stock
  • 300ml single cream
  • 2 tbsp grated parmesan (plus extra for garnish)
  • 1/2 tsp ground pepper
  • 1/2 tsp flaky salt
  • 1/2 tsp sugar

For Serving:

  • 200g ramen noodles
  • Coriander
  • Beansprouts
  • Edamame beans
  • Spring onion
  • Chili oil

Instructions

  1. Coat and Cook the Chicken: Coat chicken breasts with flour and fry until golden. Set aside.
  2. Prepare the Broth: Sauté garlic, sun-dried tomatoes, spices, then add stock, cream, and parmesan. Return chicken to the pan and cook.
  3. Season and Add Noodles: Season the broth, add more stock, then cook the ramen noodles according to package instructions.
  4. Assemble: Divide noodles and broth into bowls. Top with sliced chicken, coriander, beansprouts, spring onions, edamame beans, and chili oil.
