Cookies:

  • 1/2 cup salted butter (softened)
  • 1 cup powdered sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon clear vanilla flavoring
  • 3 cups cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar

Frosting:

  • 1/2 cup shortening
  • 3 cups powdered sugar
  • 1 teaspoon clear vanilla flavoring
  • 4 tablespoons heavy cream or milk
  • pinch of salt (optional)
  • Sprinkles

Instructions

  1. Cookies – Beat softened butter and powdered sugar until fluffy.
  2. Add eggs, oil, and vanilla flavoring; beat until combined.

    Sift together dry ingredients, mix into butter mixture.

    Chill dough for at least 1 hour.

    Preheat oven to 375°F.

    Roll out dough to 1/2″ thickness between parchment paper.

    Cut out cookie shapes.

    Bake for 8 minutes, until barely colored on the bottom.

  3. Frosting – Beat shortening, powdered sugar, and vanilla; add cream until smooth.
  4. Add food coloring, if desired.

    Spread frosting on cooled cookies, top with sprinkles.
