Potatoes:
- 4 large russet potatoes
- 2 tbsp olive oil
- Sea salt, to taste
Steak Bites:
- 1 lb steak, trimmed and cut into 2” pieces
- 4 tbsp avocado oil, divided
- Cajun seasoning, to taste
- 2 tbsp butter
- 2 tbsp minced garlic, divided
Parmesan Cream Sauce:
- 4 tbsp butter, divided
- 1 cup heavy cream
- 1/2 tsp red pepper flakes
- 1/2 cup parmesan cheese
- 1/4 cup chopped parsley
- 2 lemon wedges
Instructions
- Preheat oven and prepare potatoes: Preheat oven to 425°F. Rub potatoes with olive oil, sprinkle with sea salt, and place on a lined baking pan. Bake for 50-60 minutes until tender.
- Cook steak bites: Coat steak in avocado oil and cajun seasoning. Cook in a skillet until golden, then toss in garlic butter. Set aside.
- Make parmesan cream sauce: In the same pan, saute garlic in butter, then add cream and simmer. Stir in red pepper flakes, parmesan, parsley, and lemon juice.
- Assemble: Fluff potatoes, top with butter, steak, and parmesan sauce. Serve and enjoy!
Notes
- Make sure to use a cast iron skillet or a heavy-bottomed skillet for cooking the steak for best results.
