Ingredients
Scale
Pasta
- 8 ounces linguine pasta
Shrimp and Sauce
- 2 tablespoons olive oil
- 6 tablespoons butter, divided
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 ¼ pound large shrimp
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 4 cups baby spinach
- ½ cup parmesan cheese
- 2 tablespoons parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Cook Pasta: Bring a large pot of water to a boil and cook the linguine according to package instructions until al dente. Drain the pasta and set aside.
- Sauté Garlic and Spices: In the same pot, heat olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, cooking until the garlic is fragrant and slightly golden, about 1-2 minutes.
- Cook Shrimp and Spinach: Add the shrimp to the pot, seasoning with salt and pepper. Cook the shrimp until they start to turn pink and opaque, about 3-4 minutes. Stir in the Italian seasoning and add the baby spinach, cooking until the spinach has wilted.
- Combine Pasta and Sauce: Return the cooked linguine to the pot along with the remaining 4 tablespoons of butter, parmesan cheese, and chopped parsley. Stir everything together until the butter and cheese have fully melted and coated the pasta evenly.
- Finish with Lemon Juice: Add the tablespoon of lemon juice to the pasta, tossing gently to combine. Serve the dish immediately for best flavor and texture.
Notes
- Use fresh parsley for the best flavor, but dried can be substituted in smaller quantity.
- If you prefer less spice, reduce or omit the red pepper flakes.
- You can substitute linguine with other long pasta like fettuccine or spaghetti.
- For a creamier texture, add a splash of heavy cream or milk along with the parmesan.
- Make sure not to overcook the shrimp to keep them tender and juicy.
