Pasta Shells:

  • 12 jumbo pasta shells

Filling:

  • 1 cup turkey, chopped
  • 1 cup mashed potatoes
  • 1 tablespoon celery, diced
  • 2 tablespoons yellow onion, diced
  • 1 clove garlic, minced
  • 1 1/4 cups cheddar cheese, shredded and divided
  • Salt and pepper to taste

Additional:

  • 1 1/4 cups gravy
  • 1 cup bread stuffing

Instructions

  1. Preheat oven and prepare dish: Preheat oven to 350°F. Lightly grease a 1 1/2 quart baking dish and set aside.
  2. Cook pasta shells: Boil pasta shells for 8-9 minutes, then drain and set aside.
  3. Prepare filling: Combine chopped turkey, mashed potatoes, celery, onion, garlic, and half of the shredded cheese in a bowl. Season with salt and pepper, mix well.
  4. Assemble stuffed shells: Spread 3/4 cup of gravy on the bottom of the baking dish. Fill each pasta shell with the turkey mixture and place in the dish. Top with stuffing, remaining gravy, and cheese.
  5. Bake: Bake at 350°F for 25-30 minutes until heated through and cheese is melted. Garnish with parsley, chives, or green onions if desired. Serve hot.
