Spices:
- 1 tsp oregano
- 1 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
Other Ingredients:
- 1 tbsp olive oil
- 2 cloves garlic (minced)
- 1 small onion (chopped)
- 4 cups chicken stock
- 4 oz can green chiles
- 1/2 cup heavy whipping cream
- 4 oz cream cheese (cubed)
- 3 cups shredded rotisserie chicken
Instructions
- Saute Onion and Garlic: Add olive oil to a soup pot or dutch oven on medium-low heat. Saute onion until translucent, then add garlic and cook until fragrant.
- Add Spices: Stir in oregano, cumin, salt, pepper, paprika, and cayenne pepper. Saute briefly.
- Add Stock and Chiles: Pour in chicken stock and green chiles. Bring to a low boil.
- Simmer: Reduce heat and simmer uncovered for about 25 minutes until the stock reduces.
- Add Cream and Chicken: Stir in heavy cream, cream cheese, and shredded chicken. Cook until heated through.
- Serve: Remove from heat and serve topped with preferred toppings.
Notes
- You can adjust the spice level by adding more or less cayenne pepper.
- This chili can be garnished with shredded cheese, sour cream, avocado, or cilantro.
