Description

A comforting and low-carb twist on classic shepherd’s pie featuring a savory ground beef and vegetable base topped with creamy mashed cauliflower, baked to golden perfection. This keto-friendly recipe is perfect for those looking to enjoy a hearty meal without the traditional high-carb mashed potatoes.

Ingredients

Scale

Meat and Vegetables

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or lamb
  • 1 small zucchini, diced
  • 1 cup crushed tomatoes
  • Salt and pepper, to taste

Cauliflower Topping

  • 1 small cauliflower, cut into florets
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheese
  • Salt and pepper, to taste

Instructions

  1. Sauté aromatics: Heat the olive oil in a large saucepan over medium heat. Add the diced onion and minced garlic, cooking until they become soft and translucent.
  2. Cook the meat: Stir in the ground beef or lamb and cook, breaking it up with a spoon, until it is fully browned and cooked through.
  3. Add vegetables and tomatoes: Mix in the diced zucchini and crushed tomatoes, stirring to combine everything well.
  4. Simmer the filling: Reduce heat to low and let the mixture cook uncovered for about 10 minutes, allowing flavors to blend beautifully.
  5. Boil the cauliflower: Bring a large pot of water to a boil; add cauliflower florets and cook for 8-10 minutes until very tender.
  6. Drain cauliflower: Carefully drain the cauliflower to remove excess water and steam, crucial for achieving a smooth mash.
  7. Make cauliflower mash: Transfer the drained cauliflower to a food processor. Add butter, heavy cream, shredded cheese, salt, and pepper, then process until completely smooth and creamy.
  8. Assemble the pie: Spoon the cooked meat mixture evenly into the bottom of a large casserole dish.
  9. Add cauliflower topping: Gently spread the creamy mashed cauliflower over the meat layer to create an even top.
  10. Bake the pie: Place the casserole dish in a preheated oven at 350°F (175°C) for 20-25 minutes, until the filling is bubbly and the cauliflower topping is lightly golden brown.

Notes

  • Ensure the cauliflower is drained thoroughly to prevent watery topping.
  • Use shredded cheese of your choice; cheddar works well for flavor and melting properties.
  • For added flavor, consider seasoning the meat mixture with herbs such as thyme or rosemary.
  • This dish can be made ahead and refrigerated before baking; just add extra baking time if baking from cold.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
