Ingredients
Scale
Meat and Vegetables
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef or lamb
- 1 small zucchini, diced
- 1 cup crushed tomatoes
- Salt and pepper, to taste
Cauliflower Topping
- 1 small cauliflower, cut into florets
- 2 tablespoons butter
- 1/2 cup heavy cream
- 1/2 cup shredded cheese
- Salt and pepper, to taste
Instructions
- Sauté aromatics: Heat the olive oil in a large saucepan over medium heat. Add the diced onion and minced garlic, cooking until they become soft and translucent.
- Cook the meat: Stir in the ground beef or lamb and cook, breaking it up with a spoon, until it is fully browned and cooked through.
- Add vegetables and tomatoes: Mix in the diced zucchini and crushed tomatoes, stirring to combine everything well.
- Simmer the filling: Reduce heat to low and let the mixture cook uncovered for about 10 minutes, allowing flavors to blend beautifully.
- Boil the cauliflower: Bring a large pot of water to a boil; add cauliflower florets and cook for 8-10 minutes until very tender.
- Drain cauliflower: Carefully drain the cauliflower to remove excess water and steam, crucial for achieving a smooth mash.
- Make cauliflower mash: Transfer the drained cauliflower to a food processor. Add butter, heavy cream, shredded cheese, salt, and pepper, then process until completely smooth and creamy.
- Assemble the pie: Spoon the cooked meat mixture evenly into the bottom of a large casserole dish.
- Add cauliflower topping: Gently spread the creamy mashed cauliflower over the meat layer to create an even top.
- Bake the pie: Place the casserole dish in a preheated oven at 350°F (175°C) for 20-25 minutes, until the filling is bubbly and the cauliflower topping is lightly golden brown.
Notes
- Ensure the cauliflower is drained thoroughly to prevent watery topping.
- Use shredded cheese of your choice; cheddar works well for flavor and melting properties.
- For added flavor, consider seasoning the meat mixture with herbs such as thyme or rosemary.
- This dish can be made ahead and refrigerated before baking; just add extra baking time if baking from cold.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
