Cheese Dough:

  • 2 cups shredded cheese (mozzarella or cheddar)
  • 1/4 cup cream cheese, softened

Roll Dough:

  • 1 1/2 cups almond flour
  • 3 large eggs, divided
  • 1 teaspoon baking powder (optional)

Instructions

  1. Preheat the oven and prepare the tray: Preheat the oven to 180C/350F. Line a large baking tray with parchment paper.
  2. Melt the cheeses: In a large microwave-safe bowl, microwave the shredded cheese and cream cheese for 30 seconds. Whisk together until smooth and let it cool slightly.
  3. Combine ingredients: Add almond flour and two eggs to the cheese mixture. Mix well to form a smooth dough.
  4. Form dough balls: Shape the dough into 10 balls and place them on the lined tray. Brush with the remaining beaten egg.
  5. Bake: Bake the rolls for 25 minutes until golden. Serve warm.
