Instructions
- Preheat and Prepare Baking Sheets: Preheat your oven to 425°F (220°C). Lightly grease two large baking sheets with cooking spray or line them with parchment paper to prevent sticking.
- Arrange the Chips: Place the Tostitos scoops tortilla chips close together on the baking sheets with the bowl-side facing up. Use only whole chips to ensure the filling stays inside during baking. Set aside for filling preparation.
- Mix Cream Cheese and Egg: In a large bowl, beat the softened cream cheese until smooth. Scrape the bottom and sides of the bowl to ensure even mixing. Then, add and beat in the large egg until the mixture is fully combined and smooth.
- Add Remaining Ingredients: To the cream cheese mixture, add 8 ounces of shredded mozzarella, drained sweet corn, drained green chiles, garlic powder, salt, and black pepper. Mix everything together thoroughly until evenly incorporated.
- Fill the Chips: Spoon approximately one tablespoon of the prepared filling into the bowl of each chip, ensuring even distribution. Once all chips are filled, sprinkle the remaining shredded mozzarella cheese and grated Parmesan cheese evenly over the top of all the filled chips.
- Bake: Place the baking sheets in the preheated oven. Bake for 13 to 15 minutes or until the cheese on top begins to brown lightly and the filling is bubbly.
- Serve: Carefully remove the baking sheets from the oven. Serve the party bites immediately while warm and enjoy!
