These flavorful individual breakfast casseroles are a perfect way to start your day with a nutritious and delicious meal. Packed with cherry tomatoes, fresh spinach, and gooey mozzarella cheese, these mini casseroles are easy to make and customizable to suit your taste.
Ingredients
Casserole:
- Cooking spray
- 3 slices whole wheat bread (cubed)
- 1 pint cherry tomatoes (halved)
- 1 1/2 cups chopped fresh spinach
- 1 to 1 1/2 cups shredded mozzarella cheese
Egg Mixture:
- 12 large eggs
- 1 cup milk (2%, skim or your favorite)
- 1 teaspoon ground mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 350.
- Place torn bread pieces in the bottom of each ramekin and top with desired toppings.
- Prepare the egg mixture.
- Divide egg mixture evenly among the ramekins.
- Bake the casseroles.
Spray 6 ramekins (4” diameter size) with cooking spray. Place on a baking sheet and set aside.
Suggested toppings: cherry tomatoes, spinach, and mozzarella cheese.
In a large bowl, beat the eggs with milk, mustard, salt, and pepper until well combined.
Use a measuring cup to portion out about 3/4 cup of the egg mixture into each ramekin.
Place the ramekins on a baking sheet in the oven and bake at 350 for 30-35 minutes until set. Let cool for 5 minutes before serving.
Notes
- You can customize these breakfast casseroles with your favorite vegetables or meats.
- Make sure to grease the ramekins well to prevent sticking.
