Potatoes:
- 4 medium Yukon gold or russet potatoes (peeled, about 2.5 lbs)
Seasoning:
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 Tablespoons butter, melted
- 1 tsp fresh thyme
Broth Mixture:
- 1 cup chicken broth (or veggie broth for vegetarian option)
- 2 cloves garlic, minced
Instructions
- Preheat oven: Preheat the oven to 450 degrees F.
- Prepare seasoning: In a small bowl, whisk together melted butter, salt, pepper, and fresh thyme.
- Coat potatoes: Slice the potatoes into 1-inch rounds and place them in a large bowl. Pour the butter mixture over the potatoes and mix to coat evenly.
- Roast potatoes: Layer the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 20 minutes. Flip the potatoes and roast for an additional 15 minutes.
- Prepare broth mixture: While the potatoes are roasting, mix together the chicken broth and minced garlic.
- Final roast: Remove the potatoes from the oven, flip them once more, and pour the broth mixture over them. Return to the oven and roast for another 15 minutes.
- Finish and serve: Drizzle the potatoes with the sauce and garnish with more fresh thyme if desired before serving.
