Peanut Butter Mixture

  • 1/4 cup smooth Nuts peanut butter
  • 1/4 cup crunchy Nuts peanut butter
  • 1 tbsp honey
  • 1 tbsp unrefined coconut oil
  • A pinch of salt

Jam Swirl

  • 12 tbsp strawberry jam

Instructions

  1. Mix the peanut butter base: In a small mixing bowl, combine the smooth and crunchy peanut butters, honey, coconut oil, and a pinch of salt. Stir well until fully blended. If the mixture is too stiff, microwave it for 15 seconds to soften for easier mixing.
  2. Prepare cupcake liners: Place mini cupcake liners in a tin to hold each peanut butter mixture portion.
  3. Fill and swirl: Spoon the peanut butter mixture into each liner filling them up. Then place about 1/4 teaspoon of strawberry jam on top of each cup. Using a toothpick or sharp knife, gently swirl the jam into the peanut butter to create a marbled effect.
  4. Freeze to set: Place the filled cupcake tin in the freezer for at least 15 minutes, or until the peanut butter cups are firm and hardened.
  5. Store properly: Transfer the peanut butter and jelly cups to an airtight container and keep them in the freezer until ready to enjoy.
