Pork Breakfast Sausage:

Eggs:
18 large, divided
Butter:
4 tablespoons, divided
Whole Milk:
1 cup, divided
Kosher Salt:
1/4 teaspoon
Coarse Ground Black Pepper:
1/2 teaspoon
Ground Mustard:
1/2 teaspoon
Texas Toast:

American Cheese:

Instructions
- Preheat Oven: Preheat the oven to 375 degrees.
- Cook Sausage: In a large pan over medium-high heat, cook the breakfast sausage for 4-5 minutes until browned, breaking it apart as it cooks. Drain excess fat.
- Prepare Eggs: In the same pan, add 1 tablespoon of butter. Whisk together 10 eggs with 1/4 cup of milk, salt, and pepper. Scramble the eggs until just set.
- Assemble Casserole: Line a 9×13 pan with 6 slices of Texas toast and a slice of cheese on each. Layer with cooked sausage, scrambled eggs, and another slice of cheese. Combine the remaining 8 eggs, 3/4 cup of milk, and ground mustard. Pour this mixture over the casserole and top with the remaining toast slices.
- Bake: Brush the tops of the bread with the remaining 3 tablespoons of butter. Cover with foil and bake for 20 minutes. Remove the foil and bake an additional 20 minutes until golden and set.
