Blue Cheese Sauce

  • 1.25 cups Mayonnaise
  • ½ cup Water
  • ½ cup Buttermilk
  • ½ cup Crumbled Blue Cheese
  • 2 tsp Worcestershire Sauce
  • 1 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder

  • Favorite Crispy Fries (enough for serving)
  • 2 cups Buffalo Sauce
  • 1.5 cups Shredded Cheese (cheddar or blend works well)
  • Chopped Chives (for garnish)
  • Crumbled Blue Cheese (for garnish)

Instructions

  1. Preheat the Grill: Prepare your Oklahoma Joe’s Judge Charcoal Grill for two-zone cooking and preheat it to 375°F to allow for searing and indirect cooking.
  2. Season the Chicken: Coat the chicken thighs with canola oil, then generously season on all sides with kosher salt, black pepper, garlic powder, and cayenne powder. Set aside to allow flavors to meld.
  3. Prepare Blue Cheese Sauce: In a bowl or blender, thoroughly combine mayonnaise, water, buttermilk, crumbled blue cheese, Worcestershire sauce, kosher salt, black pepper, and garlic powder until smooth and creamy. Set the sauce aside for serving.
  4. Sear the Chicken: Place the chicken thighs over the hot direct heat side of the grill. Sear each side for 2-3 minutes to develop a flavorful crust, flipping once.
  5. Cook Chicken Indirectly with Buffalo Sauce: Move the seared chicken thighs to the cooler indirect heat side of the grill. Brush them generously with buffalo sauce, then close the grill lid and cook until the internal temperature reaches 165°F, about 10 minutes.
  6. Rest and Slice Chicken: Remove the cooked chicken from the grill and let it rest a few minutes to retain juices. Slice the thighs into bite-sized cubes and toss with additional buffalo sauce if desired.
  7. Assemble the Fries: Arrange your favorite crispy fries on a serving plate. Sprinkle shredded cheese over the fries and allow it to melt—this can be done on a warm grill or in a microwave for convenience.
