Instructions
- Prepare Baking Pan and Zucchini
Preheat the oven to 350°F (175°C) and spray a 9 x 5 inch bread pan with non-stick spray. Wrap the shredded zucchini in a paper towel and gently squeeze out some excess liquid. - Mix Dry Ingredients
In a large bowl, combine the flour, baking powder, baking soda, and salt. Mix thoroughly. - Create Buttermilk and Mix Wet Ingredients
Combine milk and vinegar in a small bowl. Whisk in melted butter and egg until smooth. - Combine Wet and Dry Mixtures
Add the milk mixture to the flour mixture. Gently fold together. - Add Zucchini, Cheese, and Green Onions
Fold in zucchini, cheddar cheese, and green onions until evenly distributed. - Bake and Cool the Bread
Pour batter into the prepared pan and bake at 350°F (175°C) for about an hour. Let cool before slicing.
