For Caramelized Onions:

  • 2 tablespoons of butter
  • 23 onions, chopped (I used vidalia)
  • 1/4 cup balsamic vinegar

For Goat Cheese Stuffed Chicken:

  • 8 oz log of goat cheese
  • 2 lbs of chicken tenderloins
  • 1 large egg
  • 1 Tablespoon of milk
  • 2 cups panko bread crumbs
  • 2 Tablespoons vegetable oil
  • 1/4 heavy whipping cream

Instructions

  1. Melt butter: Melt butter in a large skillet over medium heat.
  2. Caramelize onions: Add chopped onions to the pan; stir to coat. Cook on medium-low heat, stirring occasionally, for about 50 minutes. Add balsamic vinegar and continue stirring for a few more minutes. Remove from heat and let cool.
  3. Prepare goat cheese mixture: Combine cooled caramelized onions with goat cheese. Mix well.
  4. Prepare chicken: Whisk together egg and milk in a bowl. Place goat cheese mixture on each tenderloin, roll them up, dip in egg mixture, then coat with bread crumbs.
  5. Cook chicken: Pan fry the chicken in vegetable oil until golden brown. Finish cooking in the oven at 350°F for 10-15 minutes or until chicken reaches an internal temperature of 165°F.
  6. Prepare sauce: In a saucepan, whisk together any leftover goat cheese mixture and cream over low heat until liquefied. Spoon over cooked chicken before serving.
