- 1 stick unsalted butter
- 2 cups gluten-free all-purpose flour
- 1 tablespoon fresh baking powder

- 1 ¾ cups granulated sugar
- 2 cups milk of choice
For the Filling:
- 3–4 cups sliced peaches (see Notes)
- 1 stick unsalted butter (cut into small pieces)
- ¼ cup granulated sugar
Instructions
- Preheat oven to 350°F: Preheat your oven to 350°F.
- Melt Butter: Place 1 stick of unsalted butter in a baking dish and warm in the preheated oven until completely melted.
- Prepare Crust: In a large mixing bowl, combine gluten-free flour, baking powder, salt, and sugar. Whisk together, then gradually add milk, whisking until smooth.
- Assemble Cobbler: Pour the crust batter into the baking dish with melted butter. Do not stir.
- Add Peaches: Layer sliced peaches on top of the crust batter, pressing them gently into the batter.
- Add Toppings: Place small pieces of butter on top of the peaches and sprinkle with sugar.
- Bake: Bake the cobbler in the oven for 25 minutes or until the crust is golden brown.
- Rest: Allow the cobbler to rest for 30 minutes after baking.
- Serve: Serve warm or at room temperature, optionally with vanilla ice cream.
