Description

This Gluten-Free Peach Cobbler is a delightful and comforting dessert featuring juicy peaches cooked in a naturally sweetened syrup, topped with a tender, gluten-free biscuit-like crust. Perfect for those seeking a grain-free, dairy-free, and refined sugar-free treat, it blends fresh or frozen peaches with warm spices and a hint of maple syrup for depth of flavor. Baked to a golden brown perfection, it’s ideal for a cozy dessert served warm, especially with a scoop of dairy-free vanilla ice cream.

Ingredients

Scale

Peach Filling

  • 67 peaches (peeled or unpeeled, fresh or frozen)
  • 1/2 cup Monk Fruit sweetener or sugar
  • 1/4 cup water
  • 1 1/2 tablespoons tapioca flour or cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons maple syrup

Topping

  • 1 cup + 2 tablespoons gluten-free Bob’s Red Mill flour
  • 3/4 cup Monk Fruit or coconut sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup butter or vegan butter (melted)
  • 3/4 cup coconut milk or milk of choice
  • 1 1/2 teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons Monk Fruit or coconut sugar (for sprinkling)
  • 1/2 teaspoon cinnamon (for sprinkling)

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish to prevent sticking and ensure easy removal of the cobbler after baking.
  2. Cook peach filling: In a saucepan over high heat, combine the monk fruit sweetener (or sugar), peach slices, tapioca flour dissolved in 1/4 cup water, and lemon juice. Stir constantly as you bring the mixture to a boil to thicken and create a syrupy filling infused with cinnamon and vanilla extract.
  3. Make the topping: In a mixing bowl, combine the gluten-free flour, monk fruit or coconut sugar, baking powder, and salt. Then add the coconut milk, vanilla extract, and melted butter. Stir thoroughly until the batter is smooth and combined evenly.
  4. Assemble the cobbler: Pour the hot peach filling into the prepared baking dish. Dollop spoonfuls of the topping mixture over the peaches or spread gently with a spatula to cover them evenly.
  5. Bake the cobbler: Place the dish in the oven and bake for 35 to 40 minutes or until the topping turns a light golden brown and fully cooked through. Once done, remove from oven and let it cool slightly.
  6. Add finishing touch: Sprinkle the top of the warm cobbler with the reserved monk fruit or coconut sugar combined with cinnamon to add a subtle sweetness and spice crunch.
  7. Serve: Serve the peach cobbler warm, ideally with a scoop of dairy-free vanilla ice cream to complement the warm fruity filling and tender crust.

Notes

  • For a juicier filling, you can peel the peaches, but leaving the skins on adds extra texture and nutrients.
  • If frozen peaches are used, thaw and drain excess liquid before cooking to avoid a watery filling.
  • To make this dessert vegan, use vegan butter and ensure your sugar substitute is vegan-friendly.
  • If you prefer a sweeter cobbler, adjust the amount of monk fruit sweetener or sugar accordingly.
  • For a nuttier flavor, substitute part of the gluten-free flour with almond flour.
