Vegetables and Sauce

  • 1 lb. asparagus, trimmed
  • 3 garlic cloves, finely chopped
  • 1/4 tsp. crushed red pepper flakes
  • 2 lemons, 1 sliced, 1 zested and juiced
  • 1 tbsp. finely chopped fresh parsley, plus more for serving

Instructions

  1. Cook the Mahi-Mahi: In a large skillet over medium heat, melt 1 tablespoon of butter with 1 tablespoon of olive oil. Season the mahi mahi fillets with kosher salt and freshly ground black pepper. Add the fillets to the skillet and cook, turning occasionally, until golden brown on both sides and cooked through, about 4 to 5 minutes per side. Transfer the cooked fish to a plate and set aside.
  2. Sauté the Asparagus: In the same skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the trimmed asparagus and cook while tossing occasionally until they are tender yet crisp, about 2 to 4 minutes. Season with salt and pepper to taste. Transfer the asparagus to the plate with the cooked fish.
  3. Prepare the Lemon Garlic Sauce: Lower the heat to medium and melt the remaining 2 tablespoons of butter in the skillet. Add the finely chopped garlic and crushed red pepper flakes, cooking and stirring occasionally until fragrant, about 1 minute. Stir in the lemon slices, lemon zest, lemon juice, and chopped parsley. Remove the skillet from heat.
  4. Combine and Serve: Return the cooked mahi mahi fillets and asparagus to the skillet and spoon the lemon garlic sauce over them to coat evenly. Garnish with additional chopped parsley before serving for a fresh, vibrant finish.
