Chicken:
- 2 pounds boneless, skinless chicken breast
Cheese Mixture:
- 6 oz cream cheese (softened)
- 1/2 cup sour cream
- 1¼ cup grated cheddar cheese (divided)
- 4 cloves garlic (pressed)
- 1/4 tsp salt
- 1/4 tsp ground black pepper
Garnish:
- freshly chopped green onions
- freshly chopped parsley
Instructions
- Preheat the oven: Preheat the oven to 400˚F.
- Prepare the cheese mixture: In a medium bowl, combine the cream cheese, sour cream, 3/4 cup cheddar cheese, and garlic. Stir until well mixed.
- Season and assemble: Season each side of the chicken breast with salt and pepper. Lay the chicken flat in a large baking dish. Spread the cheese mixture evenly over the chicken. Sprinkle the remaining cheddar cheese over the top.
- Bake: Cover with foil and bake for 30 minutes. Uncover and bake for an additional 5-10 minutes or until the chicken is cooked through (165˚F internal temp.)
- Garnish and serve: Garnish with green onions or parsley and serve warm.
Notes
- This dish pairs well with steamed vegetables or a side salad.
- For extra flavor, you can add a sprinkle of paprika or cayenne to the cheese mixture.
