These Garlic Bread Mini Pizzas are a fun and easy twist on classic pizza, made in a muffin tin for perfectly portioned, crispy-edged bites. With a buttery garlic base, tangy pizza sauce, fresh veggies, melty cheese, and pepperoni toppings, they are perfect as a snack or party appetizer.

Bread Base
- 12 slices white sandwich bread, fresh
- 2 tbsp butter
- 2 garlic cloves, crushed
- 1/8 tsp salt
Toppings
- 1/2 cup pizza sauce
- 1/4 cup red onion, finely diced
- 1/3 cup mushrooms, finely chopped
- 3/4 cup grated cheese (mix of mozzarella and tasty cheese)
- 1/4 cup sliced small pepperoni
Instructions
- Preheat oven: Preheat your oven to 180C/350F to prepare for baking the mini pizzas.
- Cut bread rounds: Use a large empty 800g/28oz canned tomato can to cut out round shapes from the slices of white bread.
- Mould bread cups: Press the bread rounds gently into the cups of a muffin tin to create little bread bowls.
- Prepare garlic butter: Place butter, crushed garlic cloves, and salt into a microwave-safe bowl or mug. Microwave in 30 second increments until the butter is fully melted and fragrant.
- Brush bread with garlic butter: Generously brush the inside of each bread cup with the heated garlic butter mixture, making sure to include the crushed garlic pieces for flavor.
- Add sauce and toppings: Spoon the pizza sauce evenly into each bread cup, then top with diced red onion and chopped mushrooms.
- Add cheese and pepperoni: Sprinkle grated cheese over the vegetables in each cup, then top with a few slices of small pepperoni.
- Bake: Bake the assembled mini pizzas in the preheated oven for 10 to 15 minutes, or until the cheese is melted, bubbly, and the bread edges turn golden brown and crispy.
- Serve warm: Remove from oven and serve the mini pizzas warm for the best flavor and texture.

- Use fresh white sandwich bread for the best texture; stale bread may not shape as well.
- Pizza sauce can be store-bought or homemade, depending on your preference.
