  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract

For the Frosting

  • 8 ounces (226g) full-fat brick cream cheese, softened to room temperature
  • 3 Tablespoons (43g) unsalted butter, softened to room temperature
  • 1 and 1/4 cups (150g) confectioners’ sugar
  • 1 teaspoon pure vanilla extract

Topping

  • 3 cups (about 400g) assorted sliced fresh fruit

Instructions

  1. Make the crust: Whisk together the all-purpose flour, cornstarch, baking powder, and salt in a medium bowl to combine the dry ingredients evenly.
  2. Cream butter and sugar: In a large bowl, use a handheld or stand mixer with a paddle attachment to beat the softened butter and granulated sugar on medium-high speed until the mixture is creamy and combined, about 3 minutes.
  3. Add egg and vanilla: Beat in the room temperature egg and vanilla extract, ensuring to scrape down the sides and bottom of the bowl to fully incorporate.
  4. Combine dry and wet ingredients: Add the flour mixture to the wet ingredients and beat on low speed until just combined. Avoid overmixing. Cover the dough tightly and refrigerate for 20 minutes to up to 1 day. If chilled for longer than a few hours, let the dough rest at room temperature for 20-30 minutes before shaping.
  5. Form and bake crust: Preheat the oven to 350°F (177°C). Grease a 12-inch pizza pan with nonstick spray, then press the chilled cookie dough onto the pan in a 9–10-inch circle about 1/3-inch thick. Bake for 17–19 minutes until the edges are lightly browned. Let the crust cool completely before decorating.
  6. Make the frosting: Beat the softened cream cheese and butter together on medium speed until smooth, about 2 minutes. Add the confectioners’ sugar and vanilla extract and beat for an additional 1 minute until creamy and combined. This yields about 1 and 1/2 cups (390g) of frosting.
  7. Assemble the pizza: Spread a thick, even layer of the cream cheese frosting over the cooled sugar cookie crust.
  8. Decorate with fruit: Arrange the assorted sliced fresh fruit evenly on top of the frosting to create an attractive pattern or design.
