Instructions
- Make the crust: Whisk together the all-purpose flour, cornstarch, baking powder, and salt in a medium bowl to combine the dry ingredients evenly.
- Cream butter and sugar: In a large bowl, use a handheld or stand mixer with a paddle attachment to beat the softened butter and granulated sugar on medium-high speed until the mixture is creamy and combined, about 3 minutes.
- Add egg and vanilla: Beat in the room temperature egg and vanilla extract, ensuring to scrape down the sides and bottom of the bowl to fully incorporate.
- Combine dry and wet ingredients: Add the flour mixture to the wet ingredients and beat on low speed until just combined. Avoid overmixing. Cover the dough tightly and refrigerate for 20 minutes to up to 1 day. If chilled for longer than a few hours, let the dough rest at room temperature for 20-30 minutes before shaping.
- Form and bake crust: Preheat the oven to 350°F (177°C). Grease a 12-inch pizza pan with nonstick spray, then press the chilled cookie dough onto the pan in a 9–10-inch circle about 1/3-inch thick.
