Instructions
- Prep: Line a rimmed baking sheet with parchment paper or a silicone baking mat. Arrange the banana slices in a 5×7 rectangular shape, approximately 35 slices from two bananas.
- Blend: In a high-speed blender or food processor, combine the cottage cheese, two tablespoons of peanut butter, honey (start with 2 tablespoons and adjust to taste), and vanilla extract. Blend until the mixture is very smooth and creamy.
- Assemble: Pour the blended cottage cheese mixture evenly over the banana slices on the baking sheet, spreading it into a rectangular layer that completely covers the bananas. Drizzle the remaining one tablespoon of peanut butter over the top.
- Melt Chocolate: Place chocolate chips in a microwave-safe bowl and melt by heating in 30-second intervals, stirring between each until smooth (total 60-90 seconds). Drizzle the melted chocolate over the mixture in a zigzag pattern. For a decorative touch, drag a toothpick through the chocolate to create a pattern.
- Top: Sprinkle chopped peanuts, granola, and an optional tiny pinch of flaky sea salt over the top. Use salt sparingly as cottage cheese is naturally salty.
- Freeze: Transfer the baking sheet to the freezer and freeze for at least two hours or until completely frozen.
