Description

Frozen Cottage Cheese Bark is a refreshing, nutritious treat combining creamy blended cottage cheese with sweet banana slices, peanut butter, and chocolate, all topped with crunchy granola and peanuts. This frozen dessert is perfect for a healthy snack or an indulgent, yet wholesome dessert, offering a delightful balance of creamy, sweet, and salty flavors with a refreshing icy texture.

Ingredients

Scale

Fruit

  • 2 bananas, sliced

Mix-In

  • 2 cups cottage cheese
  • 23 tablespoons honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons peanut butter, divided
  • 3 tablespoons chocolate chips, melted

Toppings

  • 2 tablespoons peanuts, chopped
  • 3 tablespoons granola
  • Flaky sea salt (optional)

Instructions

  1. Prep: Line a rimmed baking sheet with parchment paper or a silicone baking mat. Arrange the banana slices in a 5×7 rectangular shape, approximately 35 slices from two bananas.
  2. Blend: In a high-speed blender or food processor, combine the cottage cheese, two tablespoons of peanut butter, honey (start with 2 tablespoons and adjust to taste), and vanilla extract. Blend until the mixture is very smooth and creamy.
  3. Assemble: Pour the blended cottage cheese mixture evenly over the banana slices on the baking sheet, spreading it into a rectangular layer that completely covers the bananas. Drizzle the remaining one tablespoon of peanut butter over the top.
  4. Melt Chocolate: Place chocolate chips in a microwave-safe bowl and melt by heating in 30-second intervals, stirring between each until smooth (total 60-90 seconds). Drizzle the melted chocolate over the mixture in a zigzag pattern. For a decorative touch, drag a toothpick through the chocolate to create a pattern.
  5. Top: Sprinkle chopped peanuts, granola, and an optional tiny pinch of flaky sea salt over the top. Use salt sparingly as cottage cheese is naturally salty.
  6. Freeze: Transfer the baking sheet to the freezer and freeze for at least two hours or until completely frozen.
  7. Serve: Once frozen, break the bark into chunks by hand or cut into uniform pieces with a knife. Store in a freezer-safe airtight container or gallon Ziploc bag for up to three months.
  8. Tip on Serving: Remove bark from freezer and let it sit at room temperature for 5-10 minutes to soften slightly before eating. This will give it a creamy, ice cream–like texture that is easier to enjoy.

Notes

  • You can adjust the sweetness by varying the amount of honey used in the blend.
  • Use a silicone baking mat or parchment paper to prevent sticking and ease removal.
  • Flaky sea salt enhances flavor but use sparingly to avoid over-salting.
  • Store leftovers in an airtight container in the freezer for up to three months.
  • Letting the bark soften for a few minutes before eating improves texture and flavor experience.
