Ingredients
Scale
Peach Filling
- 5–6 large fresh yellow peaches, sliced (about 5 cups, or 750–900 grams)
- 1/4 cup sugar
- 1 tablespoon cornstarch (optional)
Topping
- 1/2 cup salted butter, melted
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- A pinch of salt
- 1/4 cup turbinado sugar (optional, for sprinkling)
Serving
- Whipped cream or vanilla ice cream
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly butter the bottom of a 9×13-inch baking pan.
- Mix Peach Filling: Add sliced peaches to the pan, sprinkle with 1/4 cup sugar and optional cornstarch, then gently mix peaches and sugar directly in the pan to combine well.
- Prepare Topping Batter: In a bowl, combine melted butter, 3/4 cup sugar, vanilla extract, flour, baking powder, and salt. Mix until a cookie-dough-like batter forms.
- Assemble Cobbler: Drop scoops of the batter over the peaches in the pan, spreading gently with a spoon or fingers to cover them unevenly; perfection is not necessary.
- Bake Initial Stage: Bake the cobbler for 30 minutes. The peaches should be juicy and bubbly around the edges.
- Add Topping Sugar and Continue Baking: Sprinkle turbinado sugar evenly over the top. Then bake for an additional 10-15 minutes until the topping firms up.
- Broil to Finish: Set your oven broiler to around 475°F and broil the cobbler for a few minutes until the topping turns golden brown and slightly crunchy. Watch carefully to avoid burning.
- Rest Before Serving: Let the cobbler stand for 20-30 minutes to thicken the peach sauce beneath the topping. Serve warm with whipped cream or vanilla ice cream.
Notes
- Using cornstarch helps thicken the peach juices for a thicker sauce; omit if you prefer a runnier consistency.
- If the peach filling looks watery after baking, letting the cobbler rest helps the juices thicken up.
- Keep a close eye during broiling; the sugar topping can burn quickly.
- For extra flavor, ripe yellow peaches are recommended for their sweetness and aroma.
