Description

This Fresh Peach Cobbler is a classic and comforting dessert featuring juicy, ripe peaches baked under a tender, buttery biscuit-like topping. Its easy preparation and homey flavors make it a perfect seasonal treat served warm with vanilla ice cream or whipped cream.

Ingredients

Scale

Peach Filling

  • 56 large fresh yellow peaches, sliced (about 5 cups, or 750900 grams)
  • 1/4 cup sugar
  • 1 tablespoon cornstarch (optional)

Topping

  • 1/2 cup salted butter, melted
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/4 cup turbinado sugar (optional, for sprinkling)

Serving

  • Whipped cream or vanilla ice cream

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly butter the bottom of a 9×13-inch baking pan.
  2. Mix Peach Filling: Add sliced peaches to the pan, sprinkle with 1/4 cup sugar and optional cornstarch, then gently mix peaches and sugar directly in the pan to combine well.
  3. Prepare Topping Batter: In a bowl, combine melted butter, 3/4 cup sugar, vanilla extract, flour, baking powder, and salt. Mix until a cookie-dough-like batter forms.
  4. Assemble Cobbler: Drop scoops of the batter over the peaches in the pan, spreading gently with a spoon or fingers to cover them unevenly; perfection is not necessary.
  5. Bake Initial Stage: Bake the cobbler for 30 minutes. The peaches should be juicy and bubbly around the edges.
  6. Add Topping Sugar and Continue Baking: Sprinkle turbinado sugar evenly over the top. Then bake for an additional 10-15 minutes until the topping firms up.
  7. Broil to Finish: Set your oven broiler to around 475°F and broil the cobbler for a few minutes until the topping turns golden brown and slightly crunchy. Watch carefully to avoid burning.
  8. Rest Before Serving: Let the cobbler stand for 20-30 minutes to thicken the peach sauce beneath the topping. Serve warm with whipped cream or vanilla ice cream.

Notes

  • Using cornstarch helps thicken the peach juices for a thicker sauce; omit if you prefer a runnier consistency.
  • If the peach filling looks watery after baking, letting the cobbler rest helps the juices thicken up.
  • Keep a close eye during broiling; the sugar topping can burn quickly.
  • For extra flavor, ripe yellow peaches are recommended for their sweetness and aroma.
