Scale
Fruits
- 2 cups strawberries (stem removed and diced)
- 1 ¼ cups blueberries
- 1 ¼ cups raspberries
- 4 kiwis (peeled and sliced)
- 1 cup green grapes (halved)
- 1 medium sized red apple (chopped, approximately 1 cup)
For the Dressing
- 2 tablespoons honey (or agave nectar)
- 2 tablespoons orange juice (about half an orange)
- 1 tablespoon lime juice (about half of one small lime)
- 1 teaspoon lime zest
Garnish
- 2 tablespoons mint leaves (minced)
Instructions
- Prepare the Fruit: In a large bowl, combine the diced strawberries, blueberries, raspberries, sliced kiwis, halved green grapes, and chopped red apple. Set aside to prepare the dressing.
- Make the Dressing: In a small mixing bowl, whisk together the honey or agave nectar, fresh orange juice, lime juice, and lime zest until well combined.
- Toss the Salad: Pour the dressing over the mixed fruits in the large bowl. Gently toss all the ingredients together ensuring the fruit is evenly coated with the dressing.
- Add Fresh Mint and Chill: Sprinkle the minced fresh mint leaves over the salad and give it a final light toss. Refrigerate the fruit salad for at least one hour to allow the flavors to meld and serve chilled.
Notes
- For a vegan option, use agave nectar instead of honey.
- To keep the apple from browning, toss it in a little lemon juice before mixing with other fruits.
- Chilling the salad enhances the flavors and makes it more refreshing.
- You can substitute fruits based on seasonality and preference.
- Serve the salad immediately after refrigeration to maintain freshness.
