  • Author: lilan
  • Total Time: 1 hour 15 minutes
  • Yield: 6 servings 1x
  • Diet: Vegetarian

Description

A refreshing and vibrant fresh fruit salad featuring strawberries, blueberries, raspberries, kiwi, grapes, and apples, tossed with a zesty honey-lime dressing and fresh mint leaves. Perfect as a healthy snack or a light dessert.

Ingredients

Scale

Fruits

  • 2 cups strawberries (stem removed and diced)
  • 1 ¼ cups blueberries
  • 1 ¼ cups raspberries
  • 4 kiwis (peeled and sliced)
  • 1 cup green grapes (halved)
  • 1 medium sized red apple (chopped, approximately 1 cup)

For the Dressing

  • 2 tablespoons honey (or agave nectar)
  • 2 tablespoons orange juice (about half an orange)
  • 1 tablespoon lime juice (about half of one small lime)
  • 1 teaspoon lime zest

Garnish

  • 2 tablespoons mint leaves (minced)

Instructions

  1. Prepare the Fruit: In a large bowl, combine the diced strawberries, blueberries, raspberries, sliced kiwis, halved green grapes, and chopped red apple. Set aside to prepare the dressing.
  2. Make the Dressing: In a small mixing bowl, whisk together the honey or agave nectar, fresh orange juice, lime juice, and lime zest until well combined.
  3. Toss the Salad: Pour the dressing over the mixed fruits in the large bowl. Gently toss all the ingredients together ensuring the fruit is evenly coated with the dressing.
  4. Add Fresh Mint and Chill: Sprinkle the minced fresh mint leaves over the salad and give it a final light toss. Refrigerate the fruit salad for at least one hour to allow the flavors to meld and serve chilled.

Notes

  • For a vegan option, use agave nectar instead of honey.
  • To keep the apple from browning, toss it in a little lemon juice before mixing with other fruits.
  • Chilling the salad enhances the flavors and makes it more refreshing.
  • You can substitute fruits based on seasonality and preference.
  • Serve the salad immediately after refrigeration to maintain freshness.
