Israeli Couscous
- 1 1/2 to 2 cups Israeli couscous
Cucumbers
- 2 medium cucumbers
Parsley
- 1/4 bunch parsley
Lemon
- 1 medium lemon
Olive Oil Dressing
- 2 tbsp olive oil
- 1/4 tsp garlic powder
- 1/4 tsp salt
- Freshly cracked pepper to taste
Additional
- 3 oz. crumbled feta cheese
Instructions
- Cook the Israeli Couscous Begin by bringing a medium pot of water to a rolling boil. Add 1 1/2 to 2 cups of Israeli couscous to the boiling water and cook for 5-7 minutes. Drain and rinse with cool water.
- Prepare the Vegetables and Herbs Cut cucumbers and chop parsley. Zest lemon and add to the bowl.
- Make the Dressing Squeeze lemon juice, add olive oil, garlic powder, salt, and pepper. Mix well.
- Combine Salad Ingredients Toss cucumbers, parsley, lemon zest, couscous, and feta with dressing.
- Taste and Adjust Seasoning Adjust salt and pepper to taste.
- Serve and Enjoy Serve immediately or chill before serving.

- This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
