Instructions
- Prepare the Pan: Lightly coat a 9×13-inch baking dish with cooking spray and line it with parchment paper, leaving a 2-inch overhang on the long sides. This will make it easier to remove the fudge after it sets.
- Melt the Chocolate: Place the chocolate chips in a heatproof bowl. Microwave on high, stirring every 30 seconds, until the chocolate is completely melted and smooth. Set aside.
- Combine Butter, Evaporated Milk, and Marshmallow Fluff: In a medium saucepan over medium-high heat, combine the butter, evaporated milk, and marshmallow fluff. Attach a candy thermometer to the side of the saucepan and cook, stirring occasionally, until the butter and fluff melt and form a smooth mixture.
- Add Sugar and Boil: Stir in the sugar and bring the mixture to a gentle boil. Cook, stirring constantly to prevent scorching, until the candy thermometer reads 234ºF (soft-ball stage). If you don’t have a thermometer, cook for 4 to 5 minutes until the mixture slightly turns golden and smells like caramel.
- Combine with Melted Chocolate & Mix-ins: Remove the saucepan from heat immediately. Fold the melted chocolate into the hot mixture until thoroughly combined. Then, fold in 1 cup of your chosen mix-ins evenly.
- Set the Fudge: Pour the fudge mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of mix-ins evenly on top. Allow the fudge to cool completely at room temperature before cutting it into squares.
- Store: Store the fudge tightly wrapped at room temperature for up to 14 days to maintain freshness.
