  • Author: lilan
  • Total Time: 1 hour 10 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

This Enchilada Tofu Burrito Bowl is a flavorful, protein-packed vegetarian meal featuring marinated tofu baked to perfection, then simmered in spicy enchilada sauce. Served over fluffy white rice and topped with fresh guacamole and salsa, this dish combines classic Mexican flavors with plant-based ingredients for a satisfying and wholesome dinner option.

Ingredients

Scale

Tofu and Sauce

  • 14 oz extra firm tofu
  • 8 oz enchilada sauce
  • 1/2 large lime, juiced
  • 1 teaspoon cumin
  • 1/4 teaspoon salt

Rice

  • 4 servings cooked white rice

Toppings

  • 1 batch homemade guacamole
  • Salsa (fresh or store-bought), to taste

Instructions

  1. Press the Tofu: Drain the tofu and wrap it in a kitchen towel, covering both the top and bottom. Place a heavy object like a cast iron skillet on top to press the tofu for 25 minutes to remove excess moisture.
  2. Prepare the Rice: Cook white rice according to package instructions or using a rice cooker for convenience. Set aside once cooked.
  3. Dice and Bake Tofu: After pressing, dice the tofu into small chunks and spread them evenly on a parchment paper-lined baking sheet. Bake at 400°F (204°C) for 20-25 minutes, stirring once halfway through, until the tofu begins to dry out but is not burnt.
  4. Simmer Tofu in Sauce: Heat a skillet over medium-high heat. Add the baked tofu, enchilada sauce, lime juice, cumin, and salt to the pan. Cook for 10-15 minutes, stirring frequently, so the sauce thickens and coats the tofu evenly.
  5. Assemble Burrito Bowls: Spoon cooked white rice into bowls. Top with the enchilada tofu mixture, a generous scoop of homemade guacamole, and your choice of fresh or store-bought salsa. Serve warm.

Notes

  • Pressing tofu is crucial for removing excess water, which helps it absorb more flavor and improves texture.
  • Use parchment paper on the baking sheet to prevent tofu from sticking and to facilitate easy cleanup.
  • The baking step firms up the tofu before simmering to give it a meatier texture and better flavor absorption.
  • Adjust the amount of enchilada sauce and spices according to your preferred spice level and taste.
  • This dish pairs well with a side of black beans or a simple green salad for a complete meal.
