Instructions

  1. Separate the eggs: Carefully separate the egg yolks from the whites, placing the whites in a large metal mixing bowl and keeping yolks in the shells or in four small separate bowls to avoid breaking.
  2. Whip the egg whites: Using a hand mixer or stand mixer, whip the egg whites until stiff peaks form, ensuring the whites hold their shape firmly when you lift the beaters.
  3. Fold in ingredients: Gently fold the shredded Parmesan, chopped chives, and crumbled bacon into the whipped egg whites with a spatula to evenly distribute without deflating the mixture.
  4. Prepare the baking sheet: Line a baking sheet with parchment paper and then spoon the whipped white mixture into four mounds spaced evenly apart.
  5. Create the yolk wells: Using the back of a spoon, carefully make a deep well in the center of each mound to hold the egg yolk later.
  6. Initial bake: Bake the egg white mounds at 450°F (230°C) for 3 minutes until they begin to set and form a firm base.
  7. Add the yolks: Remove the baking sheet from the oven and gently place a single egg yolk into each well. Season each yolk with pepper to taste.
  8. Final bake: Return the baking sheet to the oven and bake until the yolks set but remain soft, about 2 to 3 minutes, depending on your oven and preference.
