Ingredients
Scale
Pudding
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 1/4 cups eggnog
- 3 egg yolks
- 1 1/2 teaspoons pure vanilla extract (divided)
Whipped Cream Topping
- 1/2 cup heavy cream (chilled)
- 2 tablespoons powdered sugar
- Ground nutmeg, for garnish
- Holiday sprinkles (optional)
Instructions
- Prepare the pudding base: In a 2-quart heavy saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the eggnog and egg yolks until the mixture is smooth and well combined.
- Cook the pudding: Place the saucepan over medium-low to medium heat. Cook the mixture, stirring constantly, until it bubbles and thickens, about 5 minutes. The pudding is ready when it coats the back of a spoon.
- Add vanilla and chill: Remove the pot from heat and stir in 1 teaspoon of vanilla extract. Transfer the pudding to a medium bowl and press plastic wrap directly onto the surface to prevent a skin from forming. Refrigerate until fully set, at least 3 hours.
- Make the whipped cream: Just before serving, beat the chilled heavy cream at medium speed until soft peaks form. Add powdered sugar and the remaining 1/2 teaspoon vanilla extract. Continue beating at medium-high speed until stiff peaks form, being careful not to overbeat.
- Serve and garnish: Divide the pudding evenly among four small glasses or bowls. Top with the freshly whipped cream and sprinkle with ground nutmeg. Optionally add holiday sprinkles for a festive touch.
Notes
- Ensure constant stirring during cooking to avoid lumps or scorching.
- Pressing plastic wrap on the pudding surface prevents a skin from forming during chilling.
- Do not overbeat the whipped cream to avoid turning it into butter.
- Use fresh eggnog for best flavor; homemade or store-bought both work well.
- Garnish creatively with seasonal sprinkles to enhance presentation for holiday gatherings.
