For the Mousse:
- 1 cup (237ml) heavy whipping cream, cold
- 1 ½ cups (170g) powdered sugar
- 8 ounces (226g) marscarpone cheese or cream cheese (low-fat cream cheese works too)
- 1 teaspoon vanilla extract
- 1 tablespoon (5g) unsweetened cocoa powder
- 1 ounce (33g) semi-sweet baking chocolate
Instructions
- Coffee Mixture: Place instant coffee in hot water, stir, and let cool for 5 minutes.
- Whipped Cream: Beat heavy whipping cream until stiff peaks form. Chill until ready to use.
- Mousse Base: Mix powdered sugar and marscarpone/cream cheese until smooth. Add vanilla extract and coffee. Fold in whipped cream gently.
- Assembly: Pipe layers of mousse into serving glasses, alternating with dustings of cocoa powder. Grate semi-sweet baking chocolate over the top layer. Chill before serving.
