Sauce:

  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional)
  • 23 tbsp corn starch
  • 13 tbsp sugar
  • 2 tbsp rice vinegar
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced (optional)

Main Ingredients:

  • 2 servings dry instant ramen noodle cakes (around 140 g total)
  • 10 oz extra firm tofu, veggies, or mushrooms of choice, sliced
  • 1 cup water or vegetable broth
  • Chopped scallions (for topping)
  • Sesame seeds (for topping)

Instructions

  1. Mix the sauce: Combine all sauce ingredients, adjust to taste, and set aside.
  2. Cook noodles: Boil water, cook noodles until chewy, then drain and set aside.
  3. Sauté: Cook tofu/veggies in a pan.
  4. Add sauce: Pour sauce into the pan, simmer until thickened.
  5. Combine: Add noodles, cook until sauce thickens.
  6. Season: Adjust seasoning if needed.
  7. Garnish: Top with sesame seeds and scallions.
  8. Serve: Enjoy hot!

Notes

  • If using more veggies or noodles, double the sauce recipe.
  • Cold water stops noodles from cooking further and removes starch.
