  • 1/2 cup frozen green peas
  • 1 large boiled potato (approximately 1.25 cups mashed)
  • 1/2 red onion
  • 1/2 inch piece fresh ginger (approximately 2 tsp, chopped)
  • 3 cloves garlic (approximately 3 tsp, chopped)

  • 1 tsp smoked paprika
  • 1 tsp coriander powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp turmeric powder

Instructions

  1. Prepare the peas: Add the frozen green peas to a small bowl and cover them with enough water to submerge them completely. This will help soften them slightly before mixing.
  2. Cook the potato: Boil or bake a large potato until fully cooked through. If using a leftover baked potato, warm it in the microwave until hot to facilitate easy mashing.
  3. Mash the potato: Place the warm potato in a bowl and mash thoroughly with a fork until smooth, forming the base of the patty mix.
  4. Chop aromatics: Peel and finely chop the red onion, ginger, and garlic while the potato is cooking, preparing them for sautéing.
  5. Sauté aromatics: Heat a little olive oil in a skillet over medium heat and sauté the chopped onion, ginger, and garlic for about 8 minutes until fragrant and softened.
  6. Combine ingredients: Add the sautéed aromatics to the mashed potato bowl along with the smoked paprika, coriander, cayenne, salt, and turmeric. Drain the peas and add them as well.
  7. Mix the batter: Thoroughly mix all ingredients by hand until a cohesive mixture forms, distributing the peas and spices evenly throughout.
  8. Shape patties: Take a tablespoon or two of the mixture and form it into a round patty, then flatten slightly with your hands. Repeat until all mixture is used.
  9. Prepare for cooking: Lightly spray the patties with cooking spray or brush them with olive oil to help them crisp during cooking.
  10. Cook the patties: Preheat an air fryer to 375°F (190°C). Place the patties in the air fryer basket in a single layer and cook for about 15 minutes, turning halfway if desired, until golden brown and crisp.

Notes

  • You can substitute frozen peas with fresh peas if available, but adjust cooking time accordingly.
  • The patties can also be pan-fried in a little oil if an air fryer is not available, approximately 3-4 minutes per side on medium heat.
  • Adjust cayenne pepper according to your spice tolerance.
  • These patties make a great snack or appetizer served with yogurt dip or chutney.
  • Leftover patties can be stored in the fridge for up to 2 days and reheated in the air fryer for best texture.
