Instructions

  1. Prepare baking sheet: Line a baking sheet with parchment paper and set aside to ensure the divinity candy has a non-stick surface to set on.
  2. Cook sugar mixture: In a medium saucepan over medium heat, combine the granulated sugar, light corn syrup, and water. Stir constantly and cook until the mixture reaches 260°F (the hard ball stage) on a candy thermometer, which will take about 25 minutes.
  3. Beat egg whites: While the sugar syrup is cooking, beat the two large egg whites in a stand mixer fitted with a whisk attachment on high speed until stiff peaks form.
  4. Combine syrup with egg whites: When the sugar mixture reaches 260°F, with the mixer running on high, slowly pour the hot syrup into the beaten egg whites in a thin, steady stream. Continue beating for 6-8 minutes until the mixture is glossy, holds its shape, and thickens. Scrape the bowl sides as needed.
  5. Add flavorings and nuts: Fold in the vanilla extract and finely chopped pecans gently using a spatula to distribute evenly without deflating the mixture.
  6. Form candies: Lightly spray two spoons with nonstick spray. Use one spoon to scoop and push heaping spoonfuls of the divinity mixture onto the prepared parchment-lined baking sheet, forming individual candies.
  7. Set the candy: Allow the divinity candies to set at room temperature for about one hour until firm and ready to serve.
