- Combine syrup with egg whites: When the sugar mixture reaches 260°F, with the mixer running on high, slowly pour the hot syrup into the beaten egg whites in a thin, steady stream. Continue beating for 6-8 minutes until the mixture is glossy, holds its shape, and thickens. Scrape the bowl sides as needed.
- Add flavorings and nuts: Fold in the vanilla extract and finely chopped pecans gently using a spatula to distribute evenly without deflating the mixture.
- Form candies: Lightly spray two spoons with nonstick spray. Use one spoon to scoop and push heaping spoonfuls of the divinity mixture onto the prepared parchment-lined baking sheet, forming individual candies.
