Instructions
- Prepare molds: Lightly grease the inside of serving glasses with vegetable oil using a paper towel to leave a thin coating, which helps with unmolding later, or leave them uncoated if serving directly.
- Soften gelatin: Soak the gelatin sheets in cold water until they become soft and pliable, then set them aside.
- Heat dairy and sugar: In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat gently until the mixture reaches a simmer—avoid boiling.
- Incorporate gelatin: Remove the saucepan from heat. Remove excess water from the softened gelatin sheets by gently squeezing, then stir the gelatin into the hot cream mixture until fully dissolved.
- Add flavorings and steep tea: Stir in the vanilla extract and add the loose leaf Earl Grey tea directly into the mixture. Allow the tea to steep for 10 to 15 minutes for a rich infusion.
- Strain and pour: Strain the mixture through a fine sieve to remove tea leaves and any solids, then pour the smooth liquid evenly into the prepared molds. Chill in the refrigerator until firmly set, at least 4 hours or preferably overnight.
- Unmold and serve: To release the panna cotta from the molds, briefly dip the bottom of each mold into hot water for about 5 seconds. Run a knife gently around the edge, then carefully invert onto a serving plate. Enjoy!
Notes
- Using gelatin sheets results in a smoother texture compared to powder gelatin.
- Do not boil the cream mixture to prevent curdling and to preserve a silky texture.
- For stronger tea flavor, steep the tea leaves longer, but be cautious of bitterness.
- The panna cotta can be made a day ahead, which enhances the flavor.
- For a decorative touch, garnish with candied orange peel or fresh berries.
