Chia Pudding:

  • 1/4 cup chia seeds
  • 1 cup pistachio milk
  • 2 tbsp zero-calorie sweetener or sugar
  • 1/4 tsp cardamom
  • 2 tbsp toasted katafi

Toasted Kataifi:

  • 2 tsp butter
  • 1/4 cup kataifi

Kataifi Pistachio Bites:

  • 2 tbsp pistachio butter
  • 1 tbsp toasted kataifi
  • 1/3 cup chocolate
  • 1 tsp coconut oil

Instructions

  1. Dubai Chocolate Chia Pudding – Stir together the chia seeds, pistachio milk, cardamom, sweetener, and kataifi in a glass bowl. Refrigerate for at least 4 hours or overnight.
  2. Toasted Kataifi – Melt butter in a pan, add kataifi, cook until golden, then set aside to cool.
  3. Kataifi Pistachio Bites – Mix pistachio butter and toasted kataifi, form into small bites. Optionally coat with melted chocolate.
  4. Chocolate Layer – Melt chocolate and coconut oil, stir well.
  5. Assembly – Divide chia pudding into dishes, pour melted chocolate over, add pistachio kataifi bites. Refrigerate briefly before serving.

  • You can prepare the Kataifi Pistachio Bites and Chocolate Layer in advance for easier assembly.
  • Adjust sweetness to taste by adding more or less sweetener/sugar.
