Chia Pudding:
- 1/4 cup chia seeds
- 1 cup pistachio milk
- 2 tbsp zero-calorie sweetener or sugar
- 1/4 tsp cardamom
- 2 tbsp toasted katafi
Toasted Kataifi:
- 2 tsp butter
- 1/4 cup kataifi
Kataifi Pistachio Bites:
- 2 tbsp pistachio butter
- 1 tbsp toasted kataifi
- 1/3 cup chocolate
- 1 tsp coconut oil
Instructions
- Dubai Chocolate Chia Pudding – Stir together the chia seeds, pistachio milk, cardamom, sweetener, and kataifi in a glass bowl. Refrigerate for at least 4 hours or overnight.
- Toasted Kataifi – Melt butter in a pan, add kataifi, cook until golden, then set aside to cool.
- Kataifi Pistachio Bites – Mix pistachio butter and toasted kataifi, form into small bites. Optionally coat with melted chocolate.
- Chocolate Layer – Melt chocolate and coconut oil, stir well.
- Assembly – Divide chia pudding into dishes, pour melted chocolate over, add pistachio kataifi bites. Refrigerate briefly before serving.
Notes
- You can prepare the Kataifi Pistachio Bites and Chocolate Layer in advance for easier assembly.
- Adjust sweetness to taste by adding more or less sweetener/sugar.
- Feel free to customize with additional toppings like fresh fruit or nuts.
