Description

Delicious and easy-to-make Date Snickers combine naturally sweet Medjool dates filled with creamy peanut butter and crunchy roasted peanuts, all coated in rich melted chocolate and sprinkled with flaky sea salt. This 5-ingredient treat is perfect for a healthier, homemade candy alternative that requires no baking and can be prepared quickly.

  • ½ cup peanut butter
  • 3 tablespoons roasted peanuts

Chocolate Coating

  • 1 ¼ cup semi-sweet or dark chocolate chips or chopped chocolate
  • ½ teaspoon avocado or coconut oil (optional, for smoother melting)
  • Flaky sea salt (for sprinkling)

Instructions

  1. Prepare the Dates: Line a plate or small baking sheet with parchment paper. Using a small paring knife, make a lengthwise slit in each date about halfway down, being careful not to cut all the way through. Gently pry open and remove the pit.
  2. Stuff the Dates: Fill each date with about ½ tablespoon of peanut butter. Add several roasted peanuts on top of the peanut butter inside each date. Place the filled dates on the prepared parchment paper and freeze until completely firm, at least 1 hour.
  3. Melt the Chocolate: In a double boiler over medium-low heat, melt the chocolate chips or chopped chocolate, stirring occasionally. Add the optional oil to improve fluidity and prevent seizing. If melting chocolate in the microwave, do so in 30-second intervals, stirring in between until smooth and fully melted.
  4. Coat the Dates: Remove the frozen dates from the freezer one at a time and dip them into the melted chocolate using a fork to ensure they are completely coated. Tap the fork gently on the side to remove excess chocolate. Place the chocolate-covered dates back onto parchment paper and immediately sprinkle with flaky sea salt while the chocolate is still warm and wet.
  5. Set and Store: Allow the chocolate to set. Store the coated dates in an airtight container in the refrigerator for up to 2 weeks or freeze them for up to 4 months. Serve chilled or at room temperature as desired.

Notes

  • Using avocado or coconut oil is optional but helps prevent the chocolate from seizing and makes coating easier.
  • For best texture, freeze the filled dates before dipping in chocolate to help the chocolate solidify quickly.
