Instructions

  1. Roast the Cauliflower: Preheat your oven to 400℉ (204℃) and line a baking sheet with parchment paper for easy cleanup. Toss the cauliflower florets in olive oil, curry powder, salt, and pepper until evenly coated. Spread them out in a single layer on the baking sheet. Roast for 25-30 minutes, tossing the florets a couple of times during cooking, until they are golden brown and caramelized. Remove from oven and allow to cool slightly.
  2. Prepare the Dressing: While the cauliflower is roasting, whisk together the plain Greek yogurt, curry powder, apple cider vinegar, garlic powder, onion powder, salt, and pepper in a bowl until the mixture is smooth and well combined.
  3. Assemble the Salad: In a medium bowl, combine the cooled roasted cauliflower, toasted sliced almonds, raisins, and chopped cilantro. Pour the dressing over the salad and toss thoroughly to evenly coat all the ingredients. Serve immediately or chill briefly to meld the flavors before serving.
