Ingredients

  • 7 cups (623g) rolled oats, old-fashioned or quick-cooking*
  • 1 cup (60g) large-flake coconut, unsweetened, optional
  • 1 cup (113g) stabilized wheat germ
  • 1 cup (99g) almonds, sliced
  • 1 cup (113g) pecans or walnuts, coarsely chopped
  • 1 cup (142g) sunflower seeds, raw or toasted
  • 1/2 cup (99g) vegetable oil
  • 1/2 teaspoon table salt
  • 1 cup (312g) maple syrup*
  • 1 tablespoon (14g) King Arthur Pure Vanilla Extract
  • 5 cups dried fruit*

Instructions

  1. Step 1: Preheat the oven to 250°F. Lightly grease two large rimmed baking sheets or line them with parchment paper.
  2. Step 2: In a very large bowl, combine the oats, coconut (if using), wheat germ, nuts, and seeds. Mix well to blend.
  3. Step 3: In a separate bowl, whisk together the vegetable oil, salt, maple syrup, and vanilla extract until smooth.
  4. Step 4: Pour the wet ingredients over the dry mixture and stir thoroughly until everything is evenly coated.
  5. Step 5: Spread the granola mixture evenly on the prepared baking sheets, pressing gently to flatten it.
  6. Step 6: Bake for about 90 minutes, stirring every 15 minutes. Use a heatproof spatula to bring the edges toward the center for even browning, and swap the position of the baking sheets in the oven each time you stir.
  7. Step 7: When the granola turns a medium golden brown, remove it from the oven and allow it to cool completely on the pans.
  8. Step 8: Transfer the cooled granola to a large bowl and mix in the dried fruit.

Tips & Variations

  • For extra flavor, try adding spices like cinnamon or nutmeg to the dry ingredients before baking.
  • Swap out nuts and seeds to customize your granola to your taste or what you have on hand.
  • If you prefer chunkier granola, press the mixture firmly before baking and avoid stirring too vigorously.
  • Use honey or agave syrup instead of maple syrup for a different natural sweetness.
  • Add fresh coconut flakes after baking rather than before to keep them crisp and flavorful.

Storage

Store granola in a tightly sealed container at room temperature for several weeks. For longer storage, freeze it in an airtight container or freezer bags. To enjoy, simply thaw at room temperature; no reheating is necessary, though a quick toast in the oven can refresh the crunchiness.

FAQs

Can I use quick oats instead of old-fashioned oats?

Yes, you can use quick-cooking oats, but the texture may be slightly less chewy and more crumbly. Old-fashioned oats tend to hold up better during baking.

Is it necessary to stir the granola while baking?

Stirring every 15 minutes helps the granola brown evenly and prevents burning. It also ensures a consistent crunch throughout the batch.

Ingredients

Scale

Dry Ingredients

  • 7 cups (623g) rolled oats, old-fashioned or quick-cooking*
  • 1 cup (60g) large-flake coconut, unsweetened, optional
  • 1 cup (113g) stabilized wheat germ
  • 1 cup (99g) almonds, sliced
  • 1 cup (113g) pecans or walnuts, coarsely chopped
  • 1 cup (142g) sunflower seeds, raw or toasted

Wet Ingredients

  • 1/2 cup (99g) vegetable oil
  • 1/2 teaspoon table salt
  • 1 cup (312g) maple syrup*
  • 1 tablespoon (14g) King Arthur Pure Vanilla Extract

Add-Ins

  • 5 cups dried fruit*

Instructions

  1. Preheat the oven: Set your oven to 250°F and lightly grease two large rimmed baking sheets or line them with parchment paper to prevent sticking.
  2. Combine dry ingredients: In a very large bowl, mix together the oats, coconut (if using), wheat germ, sliced almonds, chopped pecans or walnuts, and sunflower seeds until evenly distributed.
  3. Mix wet ingredients: In a separate bowl, whisk the vegetable oil, salt, maple syrup, and vanilla extract until smooth and well blended.
  4. Combine wet and dry mixtures: Pour the wet mixture over the dry ingredients in the large bowl. Stir and toss thoroughly until all the dry ingredients are evenly coated with the wet mixture.
  5. Spread granola on baking sheets: Evenly spread the granola onto the prepared baking sheets, pressing it gently to flatten and compact the mixture slightly.
  6. Bake and stir: Bake for about 90 minutes, stirring every 15 minutes with a heatproof spatula. Each time you stir, move the granola from the edges toward the center to ensure even browning. Also reverse the baking sheets top to bottom to promote uniform cooking.
  7. Cool the granola: Once the granola turns a medium golden brown, remove the sheets from the oven and allow the granola to cool completely on the pans, which helps it harden and become crunchy.
  8. Add dried fruit: Transfer the cooled granola to a large bowl and gently mix in the dried fruit of your choice.
  9. Store the granola: Keep the granola in a tightly closed container at room temperature for several weeks, or freeze for longer storage. You can also portion it into decorative plastic bags for gift-giving.
